Beloit, Wis. – Kerry Ingredients & Flavours offers a proprietary technology called fmt (flavour modulation technology).
The company says the technology allows food manufacturers to reduce sodium in certain products by 25 to 35 per cent without a metallic or off note.
The Flavour Modulation Technology also allows food manufacturers to reduce sugar in certain products. The company says the technology is synergistic with sugar and high intensity sweeteners; improves the overall sweetness profile; masks off-notes of proteins, vitamins and minerals; and decreases bitterness.
Applications include cookies, brownies, biscuits, muffins, crackers and yeast-raised bakery goods. Other applications include challenging drinks, dairy products, nutritional products, ready-to-drink teas and coffees, and sports nutrition.
The company adds fmt also blocks acidity in products. And it allows food manufacturers to declare natural flavour on their packaging.
